
The shell represents 11% of the egg’s mass, the egg white 58% and the egg yolk 31%. 75% of the egg consists of water, 12% protein, 11% fat and 2% vitamin and carbohydrate.
Egg yolk contains proteins A, D, E and B complex, iron, calcium, phosphate and iron. Along with all the mentioned nutrients, yolk also contains lecithin and cholesterol. Egg whites, in turn, contain protein, water, vitamin B complex, calcium and phosphate. Vitamin C is the only essential nutrient that is not present in an egg.
